Red, White and Blueberry Grilled Pierogy Salad

Tip: If you prefer not to use aluminum foil, cook pierogies on a grill pan or perforated grill skillet placed directly on the grill.

- 1 box Mrs. T’s® Mini Classic Cheddar Pierogies, frozen
- 1 tablespoon olive oil
- 1 (8-ounce) ball fresh mozzarella, cut into 1/4-inch slices
- 2 cups cherry tomatoes, halved
- 1/2 cup blueberries
- 1/4 cup store-bought red wine vinaigrette
- 1/4 cup fresh basil leaves, torn in half
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Line grill grates with a large sheet of aluminum foil to prevent pierogies from falling through. Preheat grill to medium-high heat. Toss frozen pierogies and oil together in a large bowl until coated.
- Place pierogies on grill grates and close grill lid. Cook for about 4-5 minutes per side, or until pierogies are crisp, light golden-brown, and fully heated through.
- Using a 1/2-inch or 1-inch star-shaped cookie cutter, cut mozzarella slices into stars.
- Combine grilled pierogies, mozzarella stars, tomatoes, blueberries, feta, vinaigrette, basil, salt and pepper together in a large bowl, and toss to coat. Serve and enjoy.
