Cheesy Zucchini & Pierogy Bake

Ingredients:
  • 1 box Mrs. T's Pierogy Full Size Garlic & Parmesan Pierogies
  • 1 24oz jar of your favorite marinara sauce
  • 1 medium zucchini, cut into discs (approximately 1/4" thick)
  • 6-8oz shredded mozzarella or Italian cheese blend
  • Italian seasoning for topping
  • Fresh basil for serving

Directions

  1. Preheat oven to 375°F
  2. Pour 12oz of marinara sauce into a 9x13 pan and spread into an even layer with a spatula
  3. Place alternating rows of zucchini discs and pierogies, overlapping each layer to cover about 1/2 of the other. You should end up with 3 or 4 zucchini rows and 3 rows of pierogies
  4. Pour the remaining sauce over the pierogies and zucchini, and spread to cover (being sure all pierogies have sauce on them to avoid crunchy corners)
  5. Top 6-8oz of cheese and a sprinkle of Italian seasoning
  6. Bake for 25-30 minutes, until the cheese is melted on top
  7. Serve with fresh basil and enjoy!
