Green Bean & Pierogies Potato Salad

Ingredients:
  • 1 box Mrs. T’s Classic Cheddar Mini Pierogies, frozen
  • 2 cups fresh green beans, trimmed
  • 1/2 cup sliced pickled red onions
  • 1/4 cup olive oil
  • 1/2 cup Italian dressing or vinaigrette
  • Chopped fresh parsley, for garnish

Directions

  1. Bring a medium pot of salted water to a boil. Add green beans and cook until just tender and bright green, about 2-3 minutes. Drain and rinse under cold water or place in an ice bath to stop the cooking process.
  2. Preheat a grill or grill pan over medium heat. Toss frozen pierogies with olive oil.
  3. Add pierogies to grill and cook, fl ipping halfway through, until crisp, light golden-brown and fully heated through, about 8-10 minutes.
  4. In a large serving, bowl combine pierogies, drained green beans, pickled red onions and dressing, tossing to coat. Garnish with parsley and serve.
