Pierogies with 5 Ingredient Kale Pesto

Ingredients

  • 1 1lb box of Mrs. T’s Garlic & Parmesan Pierogies
  • 2 cups kale, chopped
  • 1 clove of garlic
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 cup raw cashews
  • Salt
  • Parmesan cheese, freshly grated
  • Fresh parsley, chopped

Directions

  1. In a food processor pulse together the kale, garlic, olive oil, and lemon juice until smooth.
  2. Add the cashews and pulse together until the cashews are ground to desired consistency. Add salt to taste.
  3. Boil pierogies according to the package instructions.
  4. Drain pierogies and toss with kale pesto.
  5. Garnish with parmesan cheese and parsley if desired.
