Pierogies with Hidden Veggie Turkey Bolognese

Ingredients

  • 2 boxes Garlic & Parmesan Pierogies
  • 1-2 Tbsp olive oil
  • 2 pounds, 99% lean ground turkey
  • 1, 10oz package of steam-in-bag frozen riced cauliflower
  • 2, 24oz jars of your favorite marinara sauce
  • Optional Topping: parmesan cheese, italian seasoning

Directions

  1. Steam riced cauliflower in the microwave per package directions.
  2. Place a large pot of water on the stove and bring to a boil. Per package directions, boil Mrs. T's Garlic & Parmesan Pierogies for 3-minutes and then gently remove from the water, place into a bowl, and set aside.
  3. While the riced cauliflower is steaming, and the water is coming to a boil, place olive oil in a large skillet over medium heat. Brown turkey until no pink remains and it is cooked through (the cooked turkey will be a light, whitish color). Spoon off any excess liquid and dispose of it.
  4. Add cooked cauliflower rice and marinara sauce to the skillet with the browned turkey and mix to combine.
  5. Serve a generous scoop of the meat sauce over freshly cooked Mrs. T's Garlic & Parmesan Pierogies. Option to add a sprinkle of parmesan cheese and Italian seasoning.
