Pierogy BLT Salad

Ingredient note: if desired, serve topped with 1-2 cooked and chopped chicken breasts for additional protein

Ingredients

  • 1 1lb box of  Mrs. T's Mini Classic Cheddar Pierogies
  • 2 hearts of romaine, rinsed, dried, and chopped
  • 1 pint cherry tomatoes, halved
  • 6 strips of cooked bacon, chopped
  • 3/4 cup ranch dressing

Directions

  1. Boil a large pot of water on the stove. When boiling, cook the Mrs. T's Mini Classic Cheddar Pierogies per package directions (3 minutes). When done, drain and rinse room temperature water.
  2. While the water boils and the pierogies cook, chop the lettuce, tomatoes, and bacon. Place the chopped ingredients into a large serving bowl and toss with ranch dressing.
  3. Toss the cooked pierogies into the salad to coat with dressing.
  4. Serve and enjoy!
