Pierogy Taco Casserole with Beef



  • 1 1lb box of Mrs. T's Mini Classic Cheddar Pierogies
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1, 1oz packet of taco seasoning
  • 1/2 cup of red salsa of choice
  • 1, 15oz can of black beans, rinsed and drained
  • 1, 11oz can of sweet corn, rinsed and drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • Toppings of choice such as: diced tomatoes, cilantro, salsa, shredded lettuce, sour cream, black olives, etc.


  1. Cook Mrs. T's Mini Classic Cheddar Pierogies with olive oil in a skillet on the stovetop per package direction (approximately 8 minutes per side) until golden brown.Remove cooked pierogies from the pan and set aside.
  2. Brown the beef in the same skillet until no pink remains (approximately 7-10 minutes).
  3. When the beef is almost done cooking, preheat your oven to it's broil setting.
  4. Remove any fat, then stir in the salsa and taco seasoning until well combined.
  5. Add the black beans, corn, and half of the cheese to the skillet and stir to distribute throughout the beef mixture.
  6. Spread half of the beef mixture into an even layer on the bottom of an 8x8 baking dish.
  7. Layer half of the pierogies over the beef mixture.
  8. Add the remaining beef mixture over the pierogies and spread into an even layer.
  9. Top with the remaining pierogies and sprinkle with the remaining cheese.
  10. Place the baking dish in the oven on the broil setting to melt the cheese (approximately 2 minutes).
  11. Serve with your favorite toppings and enjoy!
